Originally from Bacolod City, Danilo Salon Yap who is fondly known as “Papa Dan” migrated to Roxas City, Capiz but found his way back to an ancestral house in Kalibo which they now call their home and where Papa Dan’s Brewed Coffee and Jazz, A Diner in the heart of Kalibo, Aklan was born.
It’s not your typical watering hole. It’s an Eclectic place, which I can simply describe as a combination of different individual elements of styles, themes, mediums and inspirations. Papa Dan an artist himself creates functional art using recycled materials which can be found in the diner such as the ceiling that was completed for almost 3 years, is made out of egg trays or the chandelier, that’s made out of empty wine bottles.
Papa Dan’s chidren Christian Delle V. Yap and Ceasar Dahn Alex V. Yap are the chef and assistant chef of the diner. They’ve created Kalibos first “thinnest” thin crust Pizza which is oozing with flavors and the ingredients are handpicked, fresh from the local market.
Local singers are also featured in the diner on Fridays, a variety of music is played from folk, rock and country to classical, jazz and bosa nova.
I highly recommend Papa Dan’s Brewed Coffee and Jazz, A Diner. The prices are affordable, the place is an artist hub for locals and tourist alike and the staff are friendly and efficient. So if you happen to go on a roadtrip towards Kalibo, Aklan, you and your friends should definitely swing by and let Papa Dan tell you himself how he created his masterpieces and tries to save mother earth, one art work at a time.
